Plant- Based Diets for Health and Environmental Sustainability
There is an increased interest in plant-based diets. These are dietary patterns that include higher proportions of plant-based foods, including nuts, seed and legumes, fruits, vegetables, and whole grains with small quantities of animal foods. In Canada alone, 40% of population are actively trying to incorporate more plant-based foods into their diets. The shift to plant-based diets are mainly due to environmental sustainability, improved nutrient and health outcomes. Body of evidence has suggested that a plant-based diet is environmentally sustainable as it has a lower carbon footprint and produce less greenhouse gas emissions.
